Her younger sister Libi and a close circle of friends joined her behind the counter, all wearing the now-iconic pink striped uniforms that have become part of the brand identity. This was never meant to be a corporate chain. It was a family project, built on hard work, fresh ingredients and genuine warmth.

What started as Spud Stop quickly grew into something bigger. The brand evolved into The Good Spud, with a fresh new look, a charming pink-themed interior with wooden tables and vintage chairs, and a growing menu that kept customers coming back week after week. The stall became so popular that Evie took the next big step and opened a second location right in her hometown of Horncastle at 12 Market Place, complete with evening service and delivery. The girl who people said was crazy for opening a jacket potato stall at twenty now runs two locations and a delivery service. So much for impossible.
